Who or what is a pitmaster?

Definition: One who operates a barbecue pit. But there’s more to it than that.

America’s Southern states have a passion for all things barbecue – they’re crazy for the grillin’ and smokin’. Snap so are we!

And you can’t have an authentic BBQ without a pitmaster. FACT!

Barbecue cook offs are a fast-growing sport in the U.S. They showcase the heritage of BBQ and educate on the evolving history and traditions. To be a standout pitmaster you need to earn your stripes at competitions and festivals.

If your life is meat, you can barbecue it all at championships! From pork ribs and beef brisket to turkey and chicken…the list goes on.

With new championships popping up each year (the current figure is around 1,000), pitmasters vie for fame, glory and cash!

Most contests are free to enter and open to the public. Featuring thousands of dollars in cash and prizes to winners, ranging from $1,500 for 1st Place to $50 for 4th Place. But we all know it’s the taking part that counts, right?

One of the most famous competitions that gets juices (literally!) flowing is the Grand National BBQ Championships. Approved by the elite Kansas City Barbecue Society (KCBS), and once proclaimed the “National BBQ Championship” on the floor of Congress, it’s a big deal in the barbecuing world!

This contest has been showing us what competition is all about for nearly three decades. Teams and restaurants from across America gather to cook off for the coveted title of National BBQ Champion. Attendees can enjoy mouth-watering BBQ Chicken, Beef Brisket, Pulled Pork, Ribs and all the delicious sides.

It doesn’t stop there! There’s glorious music on three stages – Rock, Reggae, R’n’B, Jazz and Blues fill the air with mellow beats while visitors tuck into their preferred BBQ treat. Interactive exhibits, cooking demos with top BBQ chefs, sports and kids’ activities mean there’s something for everyone. The cherry on top of this slice of event pie is the millions of dollars raised for local charities.

The American Royal World Series of Barbecue is a long-standing tradition in Kansas City.

Competitors jostle to be crowned the Grand Champion, Open Champion, Sides Champion and Kids Que winner. This festival hosts live music, delicious BBQ, activities for all and a vendor fair for BBQ enthusiasts. All proceeds go straight to charities.

I Love BBQ & Music Festival – Lake Placid, NY also sanctioned by KCBS is an annual event that attracts top-notch BBQ competitors.

Event days are filled with chances to try food and drink concessions, children’s activities, live entertainment, and much more. Funds raised are donated to local organisations.

Now, here’s a must-try recipe for you to sink your teeth into.

Easy Pulled Pork Recipe

  • 1.5-2kg (3-4lb) boneless pork shoulder
  • 2 cloves garlic, peeled and crushed
  • 8 tbsp tomato ketchup
  • 4 tbsp cider vinegar
  • 2 tbsp paprika
  • 2 tbsp dark muscovado sugar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Dijon mustard
  • Salt and freshly ground black pepper
  • Baps, coleslaw and chips, to serve
  1. To make the sauce: Place all the ingredients in a bowl and mix well.
  2. Spread the sauce thickly over the pork. Put it in a bowl, cover with cling film and leave it to marinate in the fridge for at least 2-3 hours or overnight.
  3. Put the pork and sauce in a covered dish in the oven at 140°C/275°F/Gas Mark 1 for 6-8 hours, or until the meat is tender. Baste pork occasionally with the sauce.
  4. Remove meat from oven and leave to rest for about 10 mins. Pour the liquid into a small pan and skim off any fat. Boil to reduce and thicken slightly.
  5. Place the pork on a board and cut off the skin and any visible fat. Use 2 forks to shred the meat into small pieces and stir into the sauce. Serve the pulled pork hot in baps, along with coleslaw and chips.
